Makes 24 (3–inch) cookies
1 cup unsalted butter, softened
1 cup light brown sugar
1½ teaspoon baking soda
½ cup white sugar
2 large eggs
1½ teaspoon vanilla extract
2 teaspoons instant coffee granules
3 cups all-purpose flour
16 tablespoons Benefiber® Powder*
12 ounces chocolate chips
In a mixing bowl, cream the butter and sugars with an electric mixer on medium speed for about 30 seconds. Add eggs one at a time, mixing well after each one. Add vanilla and coffee granules; mix until just blended, about 30 seconds.
Combine flour, baking soda and Benefiber® in a small bowl. Add dry ingredients to batter in mixing bowl and mix well, scraping sides of bowl to incorporate. Add chocolate chips. Mix on low speed just until the chips are mixed in.
Measure out 2 tablespoons of dough, round into balls, and place onto an ungreased cookie sheet, spacing them three inches apart. Bake for about 10 minutes or until the bottom edge begins to turn golden. Remove and let cool.
Note: For a crisper cookie, bake for 1–2 additional minutes.
